About Yukimaru
The White Calf of Okunaka
'Yukimaru' is a calf raised in the Okunaka Highland of Iwate Prefecture.
A rare domestic calf raised amidst heavy snowfall in Japan.
We named it 'Yukimaru' from the image of the heavy snow of its origin, Okunaka, and its snow-white meat quality.
Raised in gentle highlands, feeling the changing seasons, freely roaming in natural pastures, and growing with plenty of rich Jersey milk.

Tender, high-quality beef with no gamey odor
Because 'Yukimaru' is of the Jersey breed, it is raised on rich Jersey milk, resulting in fine-grained meat with low fat content.
It is tender, odorless, and possesses a versatile umami that harmonizes with any dish. We deliver it with heartfelt care from the dairy farmers of Iwate Okunaka.

Deeply flavorful umami
A consommé extracted with time and effort through slow, gentle simmering. The soup made with Yukimaru adds flavor and depth to various dishes.

Excellent pairing with cream
Yukimaru, raised on nutrient-rich milk, pairs exceptionally well with cream. How about the traditional French dish 'Blanquette'?(Veal stewed in cream)Would be perfect.
