about
What is "Osozaki-no-Buta"?
Hearty, intensely flavorful meat.
While Sasuke Pork is typically shipped around six months of age, our mother sows, "Osozaki-no-Buta," are raised for about three and a half years. This extended rearing period results in larger size, firm meat texture, and rich umami, offering a flavor that deepens with every chew.

3 Key Features

A satisfyingly chewy texture
The most distinctive feature of "Osozaki-no-Buta" is its firm, elastic chew. While modern Japanese palates often favor tenderness, the rich umami and depth of flavor in "Osozaki-no-Buta," compared to typical pork, allow you to fully savor the meat's inherent deliciousness by "chewing and appreciating" it.

Intense flavor in lean meat
We highly recommend experiencing the deep flavor of the lean meat, a unique charm of mother sows raised for extended periods.Contains approximately 1.7 times more glutamic acid and aspartic acid, the sources of umami, compared to average pork! Furthermore, its richness and mellowness are over 1.4 times that of average pork.

Exceptional value and size
While the whole body of Sasuke Pork (a premium pork brand from Iwate) yields about 50kg of meat, the mother pig weighs 100kg.It offers excellent cost performance and allows for menu development that takes advantage of its size.Normally, mother pig meat is treated as 'off-grade,' but a characteristic of Osozaki-no-Buta (a slow-aged pork product line) from integrated production is that 'its origin is traceable.'

Recommended cooking methods
Osozaki-no-Buta (a slow-aged pork product line) is characterized by its firm texture and rich umami. Here, we introduce recommended cooking methods to maximize these unique qualities, which are 'appealing in a way that ordinary pork is not.'
Pork shoulder
Pork shoulder has a good balance of fat and lean meat, allowing you to enjoy the pork's umami and texture. With Osozaki-no-Buta (a slow-aged pork product line), even thinly sliced pieces retain a firm texture, and the connective tissue becomes less noticeable.
※ Example dish: Chashu Pork Bowl

Ground pork
The resilient Osozaki-no-Buta (a slow-aged pork product line) has a substantial presence even when ground. Fine grinding results in a smooth texture that is easy to eat. For a chewier texture and richer umami, try coarse grinding. Combining both allows you to enjoy the best of each.

Pork belly
Pork belly allows you to enjoy the sweetness of the fat and its juicy flavor. Osozaki-no-Buta (a slow-aged pork product line) also has a rich umami in its lean meat, allowing you to experience the 'deliciousness of pork' even more. Slow cooking, such as in a pressure cooker, is recommended.

Other cuts also available
We offer various cuts such as arm meat, recommended for curries and stews; fillet, which is tender and delicious even when cut for katsu; and loin for tonkatsu! Please consult us about the cut that best suits your needs.

Commitment to integrated production
Delivered through integrated production
Kuji Farm (a premium pork brand) manages the entire process, from breeding and processing to sales. We pay particular attention to the health of our mother pigs, Osozaki-no-Buta (a slow-aged pork product line), by individually adjusting their feed amounts and managing each pig.

The homeland of Osozaki-no-Buta
Kuji Farm, producer of Osozaki-no-Buta and Sasuke Pork, is located in Ninohe City and Karumai Town in Iwate Prefecture's northernmost region, bordering Aomori. This is a town blessed with rich nature, featuring rolling hills formed by the Ou and Kitakami Mountains.

As mothers of Sasuke Pork
After about three years of bearing and raising young.
The mother pigs, their role fulfilled,
are shipped as Osozaki-no-Buta.
Adjusting feed amounts for each individual pig,
under a strictly managed breeding environment,
the mother pigs grow healthily and large.
Compared to Sasuke Pork, which is shipped after about six months,
their longer rearing period makes them highly rare and appealing.
